KITCHEN KORNER

PESTO RISOTTO
4 cups chicken stock
2 cups white wine
1 red onion, chopped fine
3 ribs celery, chopped
2-4 garlic cloves, minced
1 ½ cups Arborio rice
fresh pesto sauce (see recipe below)
Heat chicken stock in sauce pan and simmer until needed. In large pan or Dutch Oven heat 3-4 T olive oil and sauté onions and celery until tender. Add garlic and sauté about 5 min. more. Add raw rice and cook, stirring until all grains are coated with oil and rice turns translucent on outside, opaque inside. Pour in wine and cook/stir until wine is absorbed. Gradually add simmering stock, one ladle-full at a time, continuing to stir. Add more stock only as previous is absorbed. After about 20 minutes, when rice is creamy and all liquid has been added, stir in pesto. Top with extra parmesan.
Pesto Sauce
I make this with whatever I have on hand, and in whatever quantity I feel like throwing in the food processor. It always turns out great!
In food processor with chopping blade, place a large fistful of fresh, cleaned basil leaves. I usually throw in several mint leaves to wake up the basil. You can add a chopped celery rib or leaves, or shredded carrots. Add about ¼ cup grated Parmesan cheese and about ¼ cup olive oil. Lock lid onto processor and pulse or blend until all is processed. Continue to process as you stream in more olive oil, taking the pesto to the consistency of sour cream. Often at this point I add lemon zest and the juice of one lemon. I sometimes add plain yogurt, Greek yogurt, or sour cream to my pesto. (Especially if I want to use it up!). You can also add and process maybe 1/8 cup toasted almonds, pecans or walnuts to the pesto. Mix the pesto into the risotto and enjoy!

TIP OF THE MONTH

Finish your projects while you are still excited about them. That way you won’t end up with too many UFOs!
