15 Scrap Quilt with Mary Lou
Nuzum
Mabel Stocker is
organizing volunteers to demonstrate at the Fair. As you know, this is something that Tree City
Quilt guild has done for quite a few years and have attracted members through it
as well. Won’t you please consider
giving a demonstration? It does not have
to be anything difficult. Some of us
have demonstrated a technique, a new gadget, seasonal ideas, etc. It is totally up to you what is
demonstrated. Your demonstration should
be about 20 – 30 minutes long…..so don’t think you have to prepare for a 2 hour
lecture/demonstration! Much easier than
that and positively much more friendly.
Demonstrations will be on
Wednesday and Thursday, September 12 and 13 in the afternoon.

CIVIL
WAR
Did you know that we are in the
Sesquicentennial commemoration of our country's Civil War? That's just a fancy
way of saying it's been 150 years since the Civil War. This commemoration will
last for 3 years. There are some very beautiful Civil War replica fabrics in
the stores. Why not choose to make a
quilt and learn about our country’s history at the same time? Visit a battle field, museum, or historic
house. Learn something about Ohio ’s role in the Civil
War. Quilts and quilters played a part
in the war whether they were sending quilts with their soldiers, sending quilts
to the hospitals, using quilts as signals on the Underground Railroad, and I’m
sure in other ways. This is a good time
to contemplate our history and make a quilt in remembrance.
KITCHEN
KORNER
How about a couple summer
recipes?? There have been requests for recipes using spaghetti squash. I LOVE
this squash. It's firm and tasty and versatile and has very few calories! I
never put spaghetti
sauce on my squash. Instead here are some of the things I
do....
I first cook the
squash in my microwave. I pierce it several times around the squash with a
paring knife. Then I place it in my potato-bag quilt (or wrap it in a cotton
dish towel or paper towel). I microwave it on high for about 6 minutes. Let it
stand for 2 or 3 minutes. If it doesn't yield to finger-pressure all the way
around, 'nuke it about 3 more minutes. Let it rest and complete steaming for
about 10 minutes. It's really too darn hot to work with before then. Open the
squash, scoop out the seeds, then using a fork pull out the flesh into a large
bowl and 'fluff' it a bit with your fork. Now use your
imagination!
SPAGHETTI SQUASH PARMESAN ... and
more
For a simple and quick
fix to that steamed squash, toss with about 1/4 cup +/- of Zesty Italian
dressing, or Ranch, or 3 Cheese. Add about 1/2 cup grated Parmesan cheese and
toss again. Pour into greased casserole, top with more Parm and maybe dill weed
or paprika for a bit of color and hint of taste. Bake at 375* for 15-20 minutes
until hot and beginning to crisp a bit around the edges of the casserole
dish.
Often I make this and
add to it veggies of my choice ~ scallions, mushrooms, shredded carrots, frozen
peas, chopped spinach, etc. You may want to adjust the amount of dressing or
cheese as you add more veggies.
You can alsew use the
steamed squash in stir-fry. Add the squash after the veggies have begun to
cook, allowing time for it to brown a bit.
You can use the
steamed squash rather like cooked rice. Add chopped herbs and olive oil. Toss
well. Add fresh seeded and chopped tomatoes, black olives, chopped fresh
zucchini, etc. Use your imagination. This is a super-versatile and mild squash
with an interesting, slightly crunchy texture!
Zucchini
Cobbler
For all of us with excess
zucchini that may have gotten very large!
This looks and tastes like apple cobbler but the star of this yummy
dessert is zucchini. I’ve made it
several times and everyone thinks they are eating apple cobbler. I just love telling them that it is
zucchini!!
5 cups zucchini – peeled
and seeded. Cut the zucchini into
lengthwise quarters and slice the quarters….the pieces will look like a slice
of apple.
½ cup fresh lemon
juice
¾ cup white
sugar
1 teaspoon ground
cinnamon
½ teaspoon ground
nutmeg
4 cups all-purpose
flour
1/1/2 cups white
sugar
1/1/2 cup butter,
chilled
1 teaspoon ground
cinnamon
Preheat oven to 375. Coat a 9X13 baking dish with spray. Place zucchini and lemon juice in a large
bowl and stir to coat the zucchini. Add
¾ cup sugar, 1 teaspoon cinnamon, and the nutmeg. Set aside.
In a second large bowl,
combine flour and 1 ½ cups sugar. Cut in butter until the mixture resembles
coarse crumbs. Stir ½ cup crumb mixture
into the zucchini. Press half the
remaining crumb mixture into the prepared pan.
Spread the zucchini evenly over crust.
Crumble remaining crumb mixture over zucchini and sprinkle with
cinnamon. Bake in preheated oven for 35
– 40 minutes, or until bubbly.
( I add oatmeal to the top
crumb mix…just like any normal apple/fruit crisp recipe you are used to
using)
